What is Bromelain?

Bromelain, also known as bromelain, is a thiol protease extracted from pineapple juice and peel. It is a pale yellow amorphous powder with a slightly characteristic odor. Its molecular weight is 33,000. The optimal pH for casein, hemoglobin, and BAEE is 6-8, while the optimal pH for gelatin is 5.0. Heavy metals inhibit its enzymatic activity. Bromelain is slightly soluble in water but insoluble in ethanol and chloroform. It preferentially hydrolyzes the peptide chains on the carboxyl side of basic amino acids (such as arginine) or aromatic amino acids (such as phenylalanine and tyrosine), selectively hydrolyzes fibrin, and can break down muscle fibers, but its effect on fibrinogen is weak. Bromelain can be used for beer clarification, as a digestive aid in pharmaceuticals, and for anti-inflammatory and anti-swelling purposes.
